The Oregonian’s 5th Annual Dumpling Week is happening right now! From now until February 9th, we are joining with select group of Portland restaurants to offer a special dumpling recipe for this week only.
Chef Scott Shampine created a truly exceptional dumpling for this occasion. His Cochinita Pibil Wontons are made with slow-roasted pork shoulder that is cooked in Yucatan spices, cola, citrus, and banana leaf. The pork is then wrapped in a gyoza wrapper and then steamed to order. They are then lightly sauced with an avocado and cilantro cream and finished with pickled red onions and fresh Mexican cheese. They are delicious – and are sure to be the star of Dumpling Week. We invite you to come on in and give them a try!
